Yes, the potato, this tuber that all Peruvians worship and which somehow became our food every day, she would my country. People are surprised by my response and it is there that often took advantage, and so far I take, to talk a little about your values \u200b\u200band I knew about the scientific importance of this plant food in my nearly two years of practicing Center International Potato Center (CIP) in Lima, where every day had hundreds, thousands of potato seeds, pollinate at seven o'clock every little flower of the fields, harvesting the tubers together with my colleagues, the best clones seleccionábamos (*) , which were planted and so the cycle kept repeating.

The potato scientifically known as Solanum tuberosum , is a herbaceous plant (characterized by having soft stems) which undergoes a thickening underground stem forming tubers rich in starch, is considered one of the great foods worldwide. It originated in the highlands of South America, where it has been consumed for over 8000 years. The English conquistadors found the pope for the first time they came to Peru in 1532 in search of gold. His ambition was so great that it considered to be facing the real treasure of the Andes. The potato was brought to Europe in the 16th century by the English where it adapted well to the climate and eventually became an important staple and popular.

In Peru, may be more or less 15 to 20 potatoes edible and among the best known are: Yellow, Tomasa, Yungay, Black, Pink, Huayro, Ccompis, Yani Maiden, Maiden Sani, Peruanita, Runtush, Tumbay, Huagalina, Shiri, pinnace, Amarilis Inia, Andina, courts, Cica, Perricholi, etc, because this range of varieties in the Peruvian table can have the luxury of using a certain potato for each dish, which leads me to state clearly that the Peruvians are absolutely privileged to be holders of the diverse and significant part of a ranking because today, for its nutritional properties, the potato is the fourth most important food crop in the world.

A single medium-sized potato contains about half the daily requirement of vitamin C for adults. Other staples such as rice and wheat have this vitamin. The potato is low in fat, with only 5 percent fat of wheat, and a quarter of the calories of bread. Boiled, have more protein than corn and nearly twice the calcium. The importance of the potato in Peru, also lies in the fact that he provided poor farmers new technologies and sources of financing, as many of them were trained by institutions such as the CIP to improve their crops, and crop care of this famous tuber.
